1 Eggplant, peeled and sliced into 1/4 inch rounds
1 pound ground beef
24 ounces tomato sauce
2 cups shredded mozeralla
2 eggs
1 cup bread crumbs
2 tablespoons of olive oil
Season Y'all seasoning to taste
2 teaspoons Italian seasoning
Preheat Oven to 425 degrees. Oil baking sheets and skillet with olive oil. Whisk eggs in small dish. Combine breadcrumbs and seasoning in a separate small dish as well.
Dip eggplant rounds in egg, then press both side of eggplants in breadcrumb mixture. Place on baking sheet. Bake eggplant for 10 minutes on each side. Remove eggplant from oven and set aside.
In skillet, add ground meat and seasoning and cook on medium high until meat is brown. Add tomato sauce, and continue cooking for 10 minutes. Add eggplant rounds to skillet and top with mozzarella cheese.
Bake for 20 minutes at 425 degrees or until cheese melting and sauce is bubbling. Serves 4-6. Enjoy!
